Easy Mango Chutney

Mango chutney is a delightful sauce that originates from India. It tastes sweet and sour, it is full of flavour from the fragrant Indian spices. I have created this quick and easy mango chutney recipe, that is suitable to eat with Indian food. You can also pair it with crackers, salad and sandwiches if you wish! Whilst this recipe is basic you can enhance the flavours by toasting and grinding your own spices, adding fresh coriander and even fresh chilli for a kick. I hope you enjoy this recipe!

Time: 10-15mins

  • 2 Mangoes.
  • Juice of a half lemon.
  • 2 cloves of garlic.
  • 20g of ginger.
  • 1 red onion.
  • 50ml white vinegar.
  • 70ml water.
  • 2-4 tbs of sugar (or to taste).
  • 2 tsp of curry powder.
  • 1/2 tsp of cumin powder.
  • 1/2 tsp of garam masala
  • 1/2 tsp of coriander powder.
  • Pinch of salt.

Note: if you want the harder version. Fry the spices in 2 tablespoon of oil for one minute. Then, add the garlic, onion and ginger continue to fry that for a minute. Proceed by adding the mangos and continue from step 4.

  1. Firstly, mince the garlic and ginger, then, dice the onion into small pieces.
  2. Next, cut the mango by slicing it on either side of the pit. Scoop out the flesh and dice it into squares (roughly the size of 2cms).fullsizeoutput_a8
  3. Then, place the ginger, garlic, onion and mango into a small pot. Season the mango with the curry, garam masala coriander and cumin powder.
  4. Next, pour the vinegar and water into the pot and put it on medium-high heat.
  5. Now, mix the ingredients well. Allow the mixture to come to a boil .
  6. Once it has come to a boil, turn the heat down to a low-medium simmer. Add the sugar and mix it well. Allow it to cook until it has thickened up into a runny jam-like consistency. Note: at this point, you should taste it and season it accordingly.
  7. Lastly, squeeze in the juice of half a lemon. Allow it to cool down and place it in a clean jar or bowl (if you are using it immediately). Enjoy!Vegan Chocolate Chip Cookie (2).png
